Mushroom, spinach and goats' cheese frittata

1 tbsp olive oil
1 large flat mushroom, chopped
1 garlic clove, finely chopped
150g/5½oz spinach
3 free-range eggs, beaten
salt and freshly ground black pepper
50g/1¾oz goats' cheese, chopped


Preheat the grill to medium.
Heat the olive oil in a frying pan, add the mushroom pieces and fry for 2-3 minutes.
Add the garlic and fry for a further minute, then add the spinach and stir until wilted.
Pour over the beaten eggs, season with salt and freshly ground black pepper and sprinkle over the goats' cheese. Cook over a low heat for five minutes, or until the egg has set.
Place the frittata under the grill and cook until golden-brown on top.
To serve, cut the frittata into wedges and place onto serving plates.
